Inní mér syngur eðli

Due to rather not-so-positive happenings I haven't had time for posting or taking photos.
Well,today I had.I even had time for editing it just to cover up the untidy room.
A song that accompanied me through this time was Inní Mer Syngur Vitleysingur by Sigur Rós.It means 'Within me sings a lunatic'.The title is nothing to do with how I feel these days,just by the way.
Again,I am so surprised how much strength and dear words I get from christian people.Mind-blowing.
First the song,really, listen to it,it's...so dear(if a song can be dear): (Icelandic is such an interesting language,I've learnt a little about it the last days)

  1. What a beautiful outfit! You look great and that skirt is just beautiful! I hope things are going alright for you, better and less busy, not just because I miss your great posts but because I want to read that you are happy and that life is going well...or sometimes even if it isn't going too well keeping a happy face helps and of course much more helps knowing that God is in control of everything, sometimes it may seem like He's not around, but that's when He's the closets! That's a promess.
    Anyways you look totally beautiful and here is the recipe for my granny's Enchiladas, nothing out of the ordinary and might think - This is it? But like I said, she made them with such love that they were my favorite.
    There's different variations of Enchiladas, it varies by state in Mexico.

    For the sauce:
    4 tomatoes
    2 jalapeno chilies or 1 for the ones that don't eat too hot.
    1 little piece of garlic
    Salt

    Yo make the sauce you grill the tomatoes and chillies or you can boil them in water (easier), once they are cooked put them in a blender with the garlic and a bit of salt, taste to see how much salt you want. Now the salsa is done.

    Next:

    You will need tortillas, corn tortillas not flour, and oil.

    You heat the oil and fry the cold tortillas until the are hot, don't let them get too fried because they will be hard (I actually like them a bit crusty on the ends), flip them so they can be fried on both sides. Once they are hot (about 1 minute or 2) take them out and pat the extra grease off with a paper towel. Stack them and as you stack them pour a spoonful or two of salsa on each tortilla and spread it evenly. Then stack the next and so on.

    Where we live this is usually eaten in the morning for brunch, you eat them with scrambbled eggs.

    You see my granny was very poor, so she could only buy a few veggies to cook but she always made the best out of it, and even though anyone can make these enchiladas, I haven't tasted any that come close to hers. =)

    Sigur Rós doesn't actually sing in Icelandic. The vocals are in a made-up language called Hopelandic.

    Glad you got to find strength in our words. Love ya, girlie! :)
